Peach Custard Pie

Ingredients

  • 9 inch unbaked pie shell
  • 2 eggs, beaten
  • 1 cup sugar
  • 2 tablespoons flour
  • 1/2 cup butter, cut into pieces
  • 1 teaspoon real vanilla extract
  • 2 cups fresh NC peaches, peeled and sliced

Preparations

  1. Preheat oven to 400°F.
  2. In saucepan, combine 2 beaten eggs, sugar and flour.
  3. Add margarine and cook on low heat until butter melts, stirring constantly.
  4. Add vanilla.
  5. Fill unbaked pie shell with sliced peaches.
  6. Pour custard over peaches.
  7. Bake 8 minutes at 400°F. Reduce to 350°F and bake for 45 minutes or until set.
